Responsibilities/Job Description
This specific project will focus on the oat lipids and the stability of these. Oat is rich in lipids, which makes oat sensitive to lipolysis by native enzymes and oxidation (rancidity), giving rise to unwanted changes and decreases the shelf life of the final oat products. Preventing lipolysis and lipid oxidation at an early stage is desirable to obtain an increased product quality and reduce food waste. The aim of this project is to follow an industrial oat extraction process line to target where oxidation and lipolysis occurs, to be able to evaluate if this process could be optimized or changed to prolong the stability of the final oat products. The lipids and their oxidation products in different oat samples will be analyzed by you, using chromatographic methods (HPLC, GC), mass spectrometry and traditional spectrophotometric methods.
Biotechnology is of key importance for the transition to a sustainable society. Biotechnology research develops and exploits microorganisms or components of microorganisms to attain useful technological goals with environmentally sustainable methods. For further information, see the homepage of the division of Biotechnology (https://www.biotek.lu.se/).
The work will mainly be carried out at the Division of Biotechnology at the Department of Chemistry, Lund University, in collaboration with other university researchers and the company Lantmännen. The project is financed by Lantmännen Research Foundation (https://www.lantmannen.com/research-and-innovation/research-foundation/).
