Qualification Details

You must have a two-year master's degree (120 ECTS points) in Food Technology, Chemical Engineering, or a similar degree with an academic level equivalent to a two-year master's degree.

Furthermore, the ideal candidate has:

  • Knowledge of food science and technology (e.g., food colloids and mass transfer) and experience with process technologies
  • Knowledge of biochemical and physico-chemical characterization techniques.
  • Knowledge of extraction processes and experience with green extraction of bioactive compounds will be an advantage
  • Skills in design of experiments (DOE)/data analytics or modelling
  • Good laboratory skills
  • Good collaboration and communication skills (written and oral English)
  • Critical thinking and analytical working approach
  • Skills within statistical analyses of data and data management

Approval and Enrolment

Assessment

The assessment of the candidates will be made by Assistant professor Federico Casanova and Associate professor Aberham Hailu Feyissa, both from Food production Engineering, DTU and Associate professor Uri Lesmes from Biotechnology and Food Engineering, Technion. The assessment will be based on the qualification requirements listed above as well as the grades from MSc/BSc education.

Responsibilities/Job Description

Would you like to start your career working on our new project, which aims at providing fundamental knowledge that will enable an efficient extraction of bioactive fractions from new sustainable protein source (insect) by the use of green technologies followed by an understanding of the structure-function relationship of extract generating novel techno-functional fractions and ascertaining their potential performance during human digestion? The project is a collaboration with Israel Institute of Technology (Technion) in Israel.

This PhD position concerns extraction of bioactive fractions from insect using green technologies, followed by the application and evaluation of the techno-functional properties of extract fraction when evaluated in emulsions and human digestion.

You will be associated with the Research group for Food Production Engineering (FPE) at DTU Food. The goal of FPE is to provide new, cutting-edge knowledge of principles of industrial food processing and creation of novel technologies that contribute to sustainable food productions. Research on green processing and process optimization is one of the focus areas of the group.

Responsibilities

During your PhD project you will

  • Apply green technologies such as pulse electric field (PEF), deep eutectic solvents (DES) or combination of these technologies to extract bioactive fraction from insect
  • Design experiments to optimize extraction processes
  • Investigate biochemical and physico-chemical properties of the extracted fractions
  • Screen isolated fractions for techno-functionality as thickeners and emulsifiers
  • Produce and characterize in vitro digestibility of O/W emulsions stability of insect proteins
  • Study the digestibility of insect-based fractions in the human digestive tract using in vitro methods of the upper GI and/or the colon (using relevant--controlled bioreactors).

The PhD study includes a research stay at Technion in Israel.

During the PhD work you will

  • be responsible for your own research, supervised by experienced and engaged supervisors in a collaborative environment
  • perform research and contribute with new knowledge within the fields of extraction using green technologies (such as PEF, DES), characterizations of techno-functional properties from insect, the relationship between their structure and function and digestibility of insect-based fractions in the human digestive tract.
  • engage in collaboration with the other scientists both at DTU and Technion
  • contribute to co-supervision of students and other teaching activities.

Salary and appointment terms
